This yummy dish is perfect for lunch or dinner and is a great way of using up leftover pasta (does anyone really know the right amount of pasta to cook?!). It only takes five minutes to prepare making it perfect for picnics!
You Will Need
1 bowl leftover pasta
90g tin salmon in spring water – use skinless and boneless
100g steamed broccoli
1 tbsp chopped parsley
12.5 tsp fresh lemon juice
1 tbp olive oil
Combine all ingredients in a bowl.
Divide into two dishes. One for dinner and one for lunch the next day.
