Mmm Finger Food is always a great option when it comes to feeding little ones. Not only super easy and fun to make, these salmon croquettes are delicious too. The step by step cooking process allows your toddler to get involved in the kitchen – prepare for it to get a little messy! Serve with our yummy avocado dip and enjoy!!

Makes: 12 servings
Ingredients
- 400g Mashed potato (cooked)
- 200g Salmon (cooked – you can use fresh or canned salmon. We used fresh and it was delicious!)
- 2 spring onions
- 2.5 teaspoons fresh lemon
- 1 tbp fresh parsley
- 60g frozen garden peas
- 2 eggs
- 60g fresh breadcrumbs (we used breadcrumbs from Aldis fridge section! Much handier to use)
Method
- In a large bowl, pop in your salmon, potato, spring onions, lemon juice, parsley, peas and 1 beaten egg. Mix well until nicely combined.
- Form your croquettes by taking about a tablespoon worth of mixture out and rolling it in your hands to form your croquettes. We made 17 large enough croquettes! Pop these into a freezer for 5 minutes or a fridge for 10 minutes. This chilling helps the croquettes to hold their shape when cooking.
- In two small dishes, pop in your second beaten egg and breadcrumbs.
- Dip each salmon croquette into the egg first and then the breadcrumbs. Place onto a tray.
- Heat a small bit of oil on a non-stick frying pan on a medium to high heat. Pop your croquettes on the pan and lightly fry for about 5 minutes on both sides. You may need to do this in batches.
- Serve with our delicious Avocado Dip. Yummy! Delicious hot or cold so perfect for dinner and lunchboxes the next day!
