Getting veggies into our little one’s diets can sometimes be a battle… have you tried hiding veggies into their meals?! Try out this Yummy Hidden Veggie Sauce that can be used for an abundance of dishes such as spaghetti bolognese or a tasty chicken and veg pasta bake – they won’t spot the difference and you can rest assured they’re getting those important nutrients.
- ½ chopped medium onion
- 1 courgette
- 1 clove of crushed garlic
- 1 large carrot
- 1 leek
- 1 small red pepper
- 1 tbsp tomato puree
- 1 tsp of balsamic vinegar
- 250 – 350ml low salt or homemade chicken/vegetable stock or water
- 2 tbsp of mixed herbs
- 1 tin of chopped tomatoes
- Prepare your ingredients by chopping and dicing into small chunks.
- Add a little oil to your saucepan and set to a medium heat.
- Fry your onion and garlic until softened.
- Add in your chopped carrot, leek, courgette and red pepper and cook for approx. 5 minutes or until they are starting to soften. Don’t forget to stir the pot!
- Pop in your tin of tomatoes, tomato puree, herbs and balsamic vinegar. Bring to the boil on a high heat and then reduce to a simmer. Simmer for 30 minutes to an hour.
- Transfer your veggies into a blender and using your stock, blitz up to your desired consistency!
- Use straight away or pop into resealable containers and freeze – our stage 3 pots are perfect portion size for this!
